Anyone know where I can find a pin out diagram and/or description of the headset socket on a Nortel IP115E Model NTY506

I am assuming you meant the 1150E IP phone :) I looked at my 1140 and the Model number is close enough anyway NTY S05. Anyway, why do you want a corded headset - just use Bluetooth unless you are putting out over 120 of them :)
I know for a fact they use the dark/smoke-end headset cords. The clear-end headset cords are for amplifiers. Usually you are safe enough just knowing that piece of info.
But the pin-out from the left with the key facing down is green-white-black-red as I am looking at a smoke-end cord. Good luck to you.

Thanks Tman. Bluetooth is not an option. The headset connection on each phone will be connected to an audio combining unit to give single headset working from a radio system and the CS1000.

Question still stands, does anyone know the pin-outs for this 'phone please...
