Has anyone seen a demo of tablet PC that will work in an industrial setting? One that has a hardened case, sealable ports, etc.

There are industrial grade tablet PC's out there but not from Microsoft.
 
There are many industrial units running Microsoft OSs out there. We have multiple installations in industrial settings with tablet computers. A few questions can determine how hardened you need the tablet to be.

Extremely hardened devices (NEMA or IC-xx specs) are usually running Pocket PC/Windows CE because these units have solid state storage.

Moderately hardened tablet PCs are available and work quite well in dirty industrial environments. Rule of thumb - if laptops can to out to the industrial floor, then a tablet PC should survive pretty well - tablet PC's have fewer moving parts and no keyboard.
