illustrator 10 layers merge

hello:

i've set up different layers to make templates in a document, but everytime after saved, closed and re-open the file, everything has merged into one layer and all the fonts and images turned into outlines.

any other way to avoid that?

how are you saving the files? Are you saving them as an .AI file? I haven't known the program to merge everything and covert text to out lines with out making it do it.
