Is there any way to stop a website from a batch/other-scripting-file temporarily to perform some log maintenance and the restart it in an automated fashion?

Seems like it should be easy, but I just can't seem to find the magic bullet..
 
I'd really only like to stop the one. I found iisreset with the /STOP flag but it seems to do them all. If there is no other way, I could try that and just try to pick a really low traffic time of day to run the scripts.. Know of any alternatives?
