Go to the control panel and open add/remove programs. IE 7 beta will be listed in the program list. Remove it and IE 6.0 will be back. If it dons't come back When in add/remove there is be a box on the left side "Add/Remove windows components" where you will find a check box for IE.
When frustrated remember, in the computer world there is almost always a backdoor.
