How do I calculate how many Nortel i2007 telephones I can have on a Cisco 3750G-48PS PoE switch?

What is the max wattage produced by that switch?

i2007 POE Specs
8 Watts Idle
13 Watts In Use

Now calculate your estimated simulatenous usage, you will need

(13 watts * max estimated simultaneous sets in use) + (8 watts * idle sets) = The Wattage you can use on that POE

Hopefully that switch has enough power to supply each port 13 watts at any given time.

Minor adjustment. The quoted power draw for the 2007 is what the phone needs to see at it's end of the ethernet cable. You therefore need to add any loss through the ethernet cable itself (depends upon length) to determine how much power needs to be output from the switch.
