I need to place TEXT in an ellipse

I want to design my own logo and hope that Illustrator is what I need. I have Illustrator 8.0. I would like to create an ellipse within an ellipse and put text between the two that curves with the ellipses.

Also, how can I change the color that the gradient brush uses, I can only get it to work in orange/yellow or grey/black? I would like to use blue/lt. blue?

Disregard the text in the ellipse part, I found it in the help files... Duh
