are there any links are documentation on restoring a mailbox after 30 days?

everything I find refers back to the Recovery Storage Group, which works geat, if it less than 30 days after it was deleted.

but what happens if it has been more than 31 days?

I have had people tell me you wouldnt use a recovery storage group then, and others have said that you would.

are there any ms or exchange documents that walk you through restoring a deleted mailbox after more than 30 days?

 
that may be true, but I thought you could not use the RSG if the mailbox has been purged?

 
If a mailbox is deleted, it is retained for 30 days by default. If you run the cleanup agent, you can either reconnect or purge a deleted mailbox within the 30 day retention. If it goes beyond 30 days, or you purged the mailbox, you will need to restore a backup to an RSG and recover the mailbox. There is no Exchange limit on the age of a backup that can be restored to an RSG. THe only practical limit would be your organizations backup retention policies.
