How to remove character from a string fields

I have a report that group by project name like the following "31000 - Everett-to-Seattle Track and Signal Improvements"

How do I create a forumula to extract the above to just "Everett-to-Seattle Track and Signal Improvements"

The next project might have a different number, but the all project number should only have 5 digits.

If you always want to lose the first seven characters, then say Mid({your.field, 8, 50)
