How do I take a load-balanced server offline for maintenance?

I am running Microsoft Windows 2000 Advanced Server with two network load-balanced servers.

How do I take one server out of the loop for maintenance? Right now, I have to find a time in the middle of the night when no one is on that server to do anything with it.

I would really like to set the server so that it doesn't accept new sessions, while it waits for active sessions to finish. Then, when all sessions are finished, then it would be removed from the NLB negotiation.
