how do I associate extension to file type?

Quick question for Linux newbie: I want to associate a new file type to be a text file, just like how windows automatically identifies .TXT as text files. The extension is something new tho (not .TXT). In Linux, how can I associate this new file type with the notepad viewer?

.txt should do it as well

Or, just open it in your favourite text editor......it will remember the MIME type in some distros WM's
