How can I set the start date?

Suddenly my first task (all other tasks are sub-tasks under it) won't let me set the start date. Any idea why that is disabled and how I get it enabled?

I just tried a beta project I'm working on in MSP-07, I tried changing the Constraint Types to "Must Start On" and several others, other than "Start No Earlier Than" and I have no issues. Have you tried changing the Start Date under Project Information? The "Schedule From" I have selected is the default "Project Start Date".

You have hidden the "Start" column.

Click on any column header (to select the entire column), press the <Ins> key and select the "Start" column.
