How can I make my workstations only have access to run one program

I am in a dental office with 6 computers with win 2000 pro and 1 server running win2k server in a domain enviroment. There are two computers used in the operatories, and the rest are up front and in the office.

I want the two computers in the operatories to only run one xray program to take scans of films from a digital xray unit. I dont want them to be able to run other programs except for maybe notepad and calculator. How can i configure this? The only other time I have seen this is in school libraries where you can only run internet explorer, and nothing else.

Try adding the two computers to an OU and then apply a GPO to it.
 
Try with W2K3 AD, there are new policy to prevent user to launch application.
