How can I forward/copy all mails toand from a given email address

I have a setup using Exchange 5.5 servers.
For some email addresses I need to forward a copy of all incomming and outgoing emails for some of our email addresses.

Does anyone know how to set this up.

so you just want to forward incoming and outgoing for certain email addresses, not all? You'll need to create rules in Outlook. If the email addresses you're filtering are external, you can create them in a personal address book which can be applied to Outlook rules as well.
 
My problem is that I have to handle in outside Outlook.

This has to be done on the server side.

Well, there may be 3rd party tools that will do this, but thru Exchange itself, you can only do it for ALL emails with Journaling.
 
For incoming email, I believe that you can open the user's account in Exchange and change their Delivery Options tab to either forward the mail to another address, or forward to both the original recipient and an alternate address.
