You need a call recording device like a Tapit or the NEC Call Analyist to collect call records. Call records are not stored on the PBX server.
If you are talking about recording conversations, then you will need a device susch as the NEC voice recorder or a third party device.
The answer depends on what VM you have, inmail or UM8000, what it is licensed for and what desktop applications you have loaded on you PC. Usually the SV8100 comes with a few licenses for desktop applications. However you will need the application disk to load it on your PC. You may need to contact your NEC vender for more information on the feature.
