Hosted SharePoint "Auditing"

Looking for any pointers anyone can throw out to me ... I need to be able to tell something very basic from a system auditing standpoint - who has accessed which document in SharePoint?

My limitations: WSS 3.0 version of SharePoint, running in a hosted environment (so I have no access to the server, Central Admin, etc.).

Are any of these possibilities?

1) Custom workflow workaround process that users cannot go around, that would write history or send an email with the user & document?

2) Web services (not sure if something like SPAuditEntry might do it, and if it would be possible to enable auditing since this is hosted)

3) Any other suggestions?
