Help setting up POP3 connector and global mailbox

I've just set up Small Business Server for a company I do some work for and thought it'd be nice to set up Exchange server for them as I heard it was easier now.

Anyway, knowing nothing about Exchange, I've managed to set up a global mailbox using the POP3 connector and set up mailboxes for all the user accounts.

OK, thus far everything works great. Where I'm having a problem is routing all the mail that doesn't have a specified mailbox, e.g. info@domain.com or random@domain.com. I seemed (I think) to manage to redirect these mails to a specific mailbox using the "route undeliverable ... to mailbox .." option on the POP3 connector set up. Unless I'm mistaken this seems to remain inthe mailbox but not get downloaded to the client.

Anyway, please can somebody tell me the easiest way for an Exchange newbie to do this.

Any sugestions?
I've tried every option in the POP3 Connector settings and still no luck.
It just doesn't seem to work. Is this a known issue?
