Ok so what is in the GUI for SIP phones please? All my phones continue to use whatever is default and we have to adjust he volume on every call.

I don't have any sip phones on UCX systems.
On asterisk based systems that I have, all the sip phones retain the volume set by the user of the phone

SIP phones are to a great extent independent devices - they maintain all their properties (such as volume levels) without allowing any control to the server(s) to which they are connected. Due to that, you cannot configure SIP phone volume levels from the UCx management GUI. Typically, SIP phones have their own GUI pages that allow the user to configure various parameters of the phone. This interface differs from manufacturer to manufacturer and from model to model. You'll have to look in the phone's GUI or find a manual for your specific SIP phone to determine if/how to configure the phone to retain volume levels for multiple calls.
