If I use Norton Ghost to make an image on my machine, after I installed and configured Exchange/IIS/DNS, can I use that image to restore everything like it was in case of disaster??
Yes, It will install everything just like it was after you did it. However I would run an integrity check on the image it created before I relied on it. SOmetimes it doesn't work. I have test networks at the house though and I just rerun in back on the same computer to put it back like a fresh install so I can try different things.
Yep, this is something I use a fair bit on our main server. System state backups are all well & good, but they do not restore all of the software etc in the event of failure. I therefore have a rotating tape-library & take a ghost image once a month. I then know worst case scenario I can restore the software to within 1 month (more if I choose), & the data from my standard backup scheme.
The answer is yes. But betware these ghost images have to be taken regulary otherwise they will be useless (ie restoing with ghost and then restoring system state/apps won't work). Like James does 1-month intervals isa a good idea.

Here is an issue I run into and still have not fixed it. I crated an image from a raid 5 to an IDE drive and rebuilt the raid, now when I ghosted back to raid I get a blinking cursor and w2k does not boot.
I Ghosted a Raid 5 volume but it was Scsi Drives and I ghosted three 9 gig drives to 3 37 Gig drives. You have to go bigger. I was able to do it and it had multiple partitions. It was also Hardware Raid 5 and not software.
Remember that it you have Mapped Drive letters that things might get messed up until you make sure all the New drives have the old drive letters like they had. I ran into this.
