Sterling has two programs that you can load into SAP and then execute with the idoc type you need to create a .DDF file. You can then use the saved definition when creating a new map. There are two programs--one for SAP 3.x and one for 4.x.
If you have the SAP extension for Gentran, then Sterling should be able to provide it for you--I got it from a Sterling consultant working on a map. However, if you look in the Extensions folder, they have map templates of most of the major idoc types--you'll just have to sync up the tags if your system is on a later release.
