How do I set up call forwarding to dial outside of the office? i.e. cell phone, home number, etc...

For call forwarding, you would have to make sure the extension has a class of service with external call forwarding allowed.
Then it is simply a matter of pressing the extensions call forward key, enter 9 and the number, and then press the pound key. 3 beeps tells you, you are forwarded.
If you want the phone to ring, and then cover to a remote location, forget the above with the exception of the Class of service and add a new coverage path with the first point of coverage pointing to R1 or R<number> (the remote coverage path entry number).
"Change Coverage Remote" and add the remote number. remember 9 and the number.
The phone will ring and then cover to the remote number in the remote coverage table.
