What are the best ways to speed up file sharing from a remote office to a file server?

1. Get a faster WAN connection.

2. Use DFS to replicate the needed folders from corporate to a file server located at the remote office. (DFS can create problems of it's own as it doesn't have conflict resolution.)

You can buy routers / firewalls that alledgedly can compress speed things up. But I've got a feeling this is only "theoretical" as I've never really noticed any difference!

You could try using something like terminal services.

Or you can install a file caching appliance that stores most frequently accessed files in your remote site.

Terminal Services is a good idea. What is the file caching appliance that would support this? That is kind of interesting.....

File caching appliances are available form a myriad of vendors. Perform a google search and you'll see what I mean.
