exhange 2000 server - email tracking

Is it possible to send copies of e-mails sent/received from multiple system e-mail adresses to one particular individual without them being 'tracked' by outlook when the e-mails are opened or read.

Cheers for quick response, however how do I get over the problem of 'if the sender has tracking set in outlook, when an administrator opens it to view, the sender gets a message showing who has seen the sent item'

There aren't any read messages created by the journal recipient, per M$ Q198783:

"When an Exchange Server mailbox or public folder is used as the journal recipient, no read or delivery receipts will be generated to the original sender from the journal recipient."
