you should be able to right click on the client in the System Centre Console, All Tasks > Symantec Anti Virus > Scheduled Scans, you can then go into Edit > Scan Settings and set it there.

how can I set it ?
//machine_name/c$/folder1 ?

if you open the symantec system centre console and follow the steps above, you'll be able to exclude what you want, either at drive level or folder/file level.
