How do I copy the users emails from one mailbox to another due to a name change (marriage)?

Why are you creating a new mailbox for the same user? Just change the existing one.

But, if you must do it the hard way, you'll need to use Exmerge to migrate the mail. You'll lose Single Instance Store doing it.

id like to have the user have the ability to receive emails from the old name too for the time being...

Yeah, so?

A user account can have multiple email addresses associated with it. The recommended way is rename the account & display name, and add the new email address. Problem solved.
