Is it possible to have a Exch2000 server in production,
then one for like a failover Exch2000? Incase one server goes down the other server will take over?

With Exchange 2000 you can have an Active/Active cluster (all servers in cluster are online at the same time and they will all accept client connections). You'll need Windows 2000 Advanced Server for a 2 server cluster, and Windows 2000 Datacenter Server for up to a 4 node cluster.
