I cut and Paste-Special (to retain formatting) MSexcel spreadsheets in PM65 documents and resize them to fit the page. When the file is exported to PDF using Acrobat 5, the spreadsheet has a section cut off. Any ideas?

Yes, the reason the excel file is cut off in the pdf is that the ps driver doesn't handle metafiles very well.
What you will need to do is get the excel file into a graphic format like a tiff or jpeg. Then place the graphic file into Pagemaker and then export.

I have tried to convert the spreadsheet to a tiff file using Photoshop and Photopaint they both seem to only allow me to convert to PSD or CPT...which cannot be placed in PM65. If I insert them as an object, the same problem occurs. Any idea?

Can you get it into PDF format from the spreadsheet program or from a photo program.
See if from your spreadsheet program you can do the following.
Print to a ps file using the adobe driver (generic ps printer)
Then open the ps file using distiller that comes with Pagemaker.
You can open it in Reader and check out how it looks.
You can place a pdf into Pagemaker.
I still had the same problem with the spreadsheet after converting to pdf. BUT....I pasted the section of the spreadsheet I needed into Photoshop, converted to RGB and saved as a tiff file...I could then place the file easily into pagemaker...and it worked!
