Our core location will be going through a power down in a few weeks. At our core, we have System Platform, Modular Messaging, Session Border Controller, CM servers. If I shutdown System Platform, do I still need to shutdown the CM servers or are they auto-shutdown in the process (along w/Session Manager)?

When System Platform is shutdown, it will shutdown all of the virtual machines running on it.
Modular Messaging is a separate server, you'll have to shutdown that one as well.
each server needs to be shutdown, whatever is running on it.
