Employee gone-need to monitor their mail

Hello
I have an employee who is gone. We need to monitor her mail. How do allow a user to open her account in Outlook 2003 inaddition to his/her own?

remove their smtp address. Add it to someone elses.

Add rights for the watching user to the gone users email account in AD.
Then go into properties of the watching users Outlook and add the mailbox to their Outlook.
