Edit a PDF

We have a process that creates a TIFF image then converts that image into a PDF.

Recently we have had the need to be able to edit and/or cut and paste portions of the information.

I know as an image in a PDF, we can't edit or extract any of the information, I was just wondering if anyone knew of a way around this, or possibly a way to do a TIFF to TXT conversion?

Just a little info... [sunshine]

A great tool for editing PDFs is the program Enfocus PitStop. You can edit text, colors, positioning of items, including text and graphics. Very helpful.
 
I downloaded acrobat 7.0 to try it out. It worked fine for a week, that is when I filled in job applications it remembered the text for the nextform.
When I rebooted now I cant even use the text to type in texzt to the forms. I checked the document security properties and there arent any security on these applications. I cant figure out how to get the text to work so that I can fill them out. NOw I have to convert to .rtf, fill in and convert back so I cant use the auto fil.
Any help appreciated
