How do you delete mail from other people's mailboxes?
Thanks in advance for you help!

As long as you have admin access, you can open another user's mailbox through your Outlook client and delete whatever you want. Is there something else you're looking to do?

Thanks! But, how do you set it up in outlook client to administer other users mailboxes?
P.S. I have local & domain admin rights...sorrie i'm new to administrating exchange server.

no problem. Local and Domain admin rights may not help you here. Assuming you're using a separate Service Account , you'll need to go into Exchange Admin and add your account with at least Admin Permissions on both the Site and Servers container. Then, in Outlook, you go to Tools, Services, Highlight Microsoft Exchange Server and hit Properties, go to Advanced, then Add. Type in the last name of the user you'd like to connect and click OK. This method will give you the user's entire mailbox. To disconnect, go thru the same steps and finish with Remove.
