Is there a way to delete attachments from emails in an Exchange mailbox?
(Keep the message, but get rid of the attachment).

Once they are accepted, you cannot delete them. If the answer is here, mark it, others can benefit from it too.

I once did an exercise to go through all mailboxes and delete any .EXE files.
I set .EXE files to be blocked on our Exchange virus scanner (Norton), set it to replace it with nothing, and run a manual scan. EXE's got stripped out of all emails and put into quarantine where i deleted them. This isn't the best answer but it will work with any attachment.

Hmm, it'a a workaround to be considered. If the answer is here, mark it, others can benefit from it too.
