I am working on setting up a DID and we have 3 digit exts internally. If I have a PRI # of (270)782-1234 and someone dials it externally, will ext 123 or ext 234 ring?

A lot depends on what you carrier is sending you. Are they sending you only the last 3 digits, or all 10?
if they send you all 10, then you will have to setup to strip the digits you don't need. Check with your carrier to make sure you know what they are sending.

Are your DID trunks 2-wire copper trunk circuits or do they come in on ds1 or PRI?

If your carrier is only sending 3 digits it will be 234 that would ring unless you have some kind of translation happening in INCOMING CALL HANDLING TREATMENT

Assuming you know the Trunk Group:

G3R only went as high at g3rv11. The admin screens for g3r would be in the trunk-group form for the PRI.
Your example would be for cm3 (R013) and higher
