Decomissioning Global Catalog and promoting a new one

I have been migrating various services, products and applications off of an SBS2000 AD DC (which is a Global Catalog Server) on to 2 clean Win2ksvr boxes

these include DNS, DHCP, SQL, IIS, the whole gubbins, Exchange is next, and i am fairly confident i can do it.

My question is how do i demote the First name controller and promote a secondary machine?

Let me ask a different way

This is what i think i should do, is it right?

I promote a second machine to replication partner, specify it a Global Catalog Server along with the current one in Sites and Services under First Name e.t.c.

Then what?

Demote the other one and hope that the workstations try authenticating with the new one? (bit risky)

Is there something in DNS for example that needs to tell the workstaions where to look for the NEW Authenticating Domain Controller.

I'm sure i'll get it but would like to find out from an expert that has done it before.
