Please can you help? I need a query expression that will return all record that are more than 3 years older than today.

Try DATEADD() function

Something like this

yourdate > DateAdd(yy,-3,now())

-SecondToNone
 
3 years older than today
In the query grid in the criteria cell of the record's date field:
< DateAdd('yyyy', -3, Date())
