Data warehousing is basically the collection of data from all the operational systems of an organization into a single infomation database. This single infomation centre or Data warehouse represents a single view of the truth for the organisation on which strategic decisions and planning can be based.
The data in a data warehouse must be uniform (i.e. the same format) and is mostly summrized data. In other words the total sales figures for a given period as opposed to the singular transactions for such a period. The data is also normally multidemensional meaning that you can view the same data from a time, geographic or sociological angle.
The process of getting data into a warehouse normally entails some kind of a conversion from the operational systems during which data is formatted and cleaned to conform to the structure and format of the warehouse.
Users / Data analysts can normally acces this data with queries by means of a tool such as Cognos or MS Access.
The data warehouse also differs greatly from an opertaional system database in its structure such that it is aimed at information delivery as oppsed to transactional delivery.
This is a very brief description but if you look around you are sure to find a lot more on the subject. It is a very exciting subject and quite a new field.
