Credit Card Security Deposit

I'm running Micros RES 3700. We are going to begin offering large catering pans of food to go, but would like to secure a deposit for them. Is there any way to do this? My first thought was to do something similar to gift cards, because when we collect the deposit, it is not considered sales, just like a gift card. And we could then easily use that credit for payment when the time came.

Just to clarify - I'd like to collect a deposit, and be able to hold it in micros, with an order number or some unique identifier, and use for payment when the order is collected. Any help?
