This link might help. Their blurb says:
"ExchangeRecovery is a data recovery program for Microsoft Exchange Server.
In case of server crash or accidental deleting of a Microsoft Exchange Server mailbox, Offline Storage Files (.ost) remain on client computer, containing emails, contacts, tasks and other items from the original mail account. ExchangeRecovery converts these files to more common Personal Storage File (.pst) format to be read with Outlook or other compatible mail client."
I haven't tried it, but hope it helps.
