The clear AR accumulators function affects accumulators in customers, salespeople, tax codes and service codes (assuming they're being used). In most cases the AR accumulators are just reference information so you probably need to weigh the value of this information versus the work to recover/rebuild it.
The most thorough solution is to restore Progression completely though this may not be feasible depending on how much work has been done in the interim.
Most of the YTD accumulators get copied to corresponding LYTD fields so another option is to use queries or other tools to update the YTD values from the LYTD values. LYTD values would still be incorrect but these are less critical and could also be rebuilt from a backup copy of the tables if need be.
Another option is to restore the affected tables to another database the use queries or other tools to update the live tables from the restored tables.
Finally - you could potentially rebuild the affected fields from the detailed sales information contained in your posted invoices files (OEHDRHST and OELINHST). You would need to develop reports to calculate the required values and/or use queries to update them.
