what are there differences?

The differences are what ever you set them too or what ever the defaults are which is in the Setup and Operation Guide.
Odd numbers are 1 language and even numbers another language.

The manual that I have describes the values of each class. For example:

Class 1 is usually the one we use for the employees:
Prompt Lang: Yes
Max Mailbox Mess time: 15 min
Max Mess Lenght: 3 min
Mess retention period: 30 days
Personal greeting: Y
Greeting Length: 1 min
Groups Lists: Y
Off Premise Mess Notification: Y
Retry Intervals: 5
Number of attempts: 3

For our informational exts we use class 7 and turn off the ability to leave messages for this ext:
Prompt Lang: Yes
Max Mailbox Mess time: 20 min
Max Mess Lenght: 2 min
Mess retention period: 15 days
Personal greeting: Y
Greeting Length: 10 min
Groups Lists: Y
Off Premise Mess Notification: Y
Retry Intervals: 30
Number of attempts: 9
