dear joe, just do
in bash#: joe /etc/X11/XF86Config
and edit it and restart x server

If you've set up your XServer correctly, you should be able to press "ctrl alt +" make sure you press the one on your number pad. It can cycle through video modes dynamically rather than entering resolutions manually. Another option if you've set your server correctly is xvidtune. This can also cycle the options and adjust horiz. and vert. settings.

Hope this helps.

Make sure it is setup correctly by running Xconfigurator and checking all available resolutions.
