If not a call pilot, I set up the options on one tree only but did not present the menu options in the path 0 recording, instead the recording in greeting 1 to be "press 1 for sales, 2 for service 3 for office". and then set greeting 2 to be "press 4 to reach plant manager, press 5 for emergency pager."
notice that any of the options are valid you just don't tell the caller that they have them. then your greeting 1 for weekday operations and greeting 2 for weekend operations and greeting 4 for closed. as long as your callers don't complain about not getting answered when they press a button that is not offered you should be ok
