I need to be setting up a new CDN/Times/Scripts/Partitions/Skillsets.
It has been awhile since I have played with this stuff.
My question is:
What and how do I back up just enough to put me back as it was if I goof something up ?
(yeah, new shouldn't hurt existing, but it doesn't always work that way)
So that my system could be back to 'as it was' as QUICKLY as possible.
That is why I don't want to just do a complete backup.
Any suggestions ?

I don't see why you would want to backup your system if your making these types of changes. If your building new then you should have any problems. You may just want to do an export of all your scripts just to be safe but other then that you should be able to create all of the above and be able to delete them should you muck it up.
