I have 2 CAS servers in my environment CAS01 and CAS02. I just have a question if I want to force someone to use CAS02 how would I do that? When I go to outlook and put in the Server and then the username and click check name it keeps reverting to CAS01

You can't do it on a mailbox level, but you can do it on the mailbox database level. You'd use the "set-mailboxdatabase maildb1 -rpclientaccessserver CAS02.domain.local" command, substituting your actual database name and server name.
