In the past, I have setup "Mobile" Outlook features (using Outlook 2000 w/Exchange 2000). Can't remember off hand how (been a while). This allowed a laptop user to read e-mails and reply to them, next time the connected to the network, it would synchronize with the Exchange server. The users perfered the alternate solution, OWA.
Do not run in Cache mode unless you are Outlook 2003 with Exchange 2003. I have seen serrors (especially with multiple profiles) when running in cached mode using Outlook 2003 with Exchange 2000 (such as "Exchange Server currently running in recovery mode") -mrnewsguy
