I'm a remote worker and have a person who claims the conference key drops calls or connects calls but I think it's user error. He claims to be doing it correctly. Can I trace a call and see what he's actually pressing?

Not so much ... If its a 2616 then I believe you could.

Ld 80
TRAC "TN of the phone"

I used to have super powers but my therapist took them away...

On a CS1000 in LD 80 when you TRAC a TN it gives you the current status of the set and it's buttons. But trying to catch someone pressing a key is almost impossible.

Enhanced Trace for the set will capture all activity from the phone, Digital or IP.

The terms you use to describe the issue smack of the user taking a call, using an AO6 key for transfer (but its marked as conference/Transfer, and is putting the handset down on transfer rather than pressing the AO6 key again to join all parties.
