Just by visiting that site, do you find anything wrong that would hurt my searching? Do you suggest anything to help my searching?

Any and all answers/feedback are appreciated. I just don't understand why I'm not searching...

How long does it take to be ranked and enabled to be searched once google cache's you're new pages?

It makes sense to me now that it's not good to repeat a phrase a million times, but rather break up the phrase throughout the website.

example: instead of using "new jersey day spa" as "new jersey day spa", I could break it up in sentences and use ..

"located in New Jersey...."

"Our day spa provides..."

Stuff like that?

Exactly, and in doing so you also start to rank for other phrases.
One thing to keep in mind is SEs rank pages not sites. so every page in your site has an equal chance of being found, and quite often the oddest phrase will result in a sale.

All this said, is it still a good idea to have my main keyword as the h1 header, and have it in my title..or should I break that up as well?

Title is the most important place to put your key phrases.

heading tags should be used for their proper purpose to structure the document. So if the right way would be to use a keyphrase as a heading, then do that, it gives the correct emphasis to the page.

the SE algos are getting nearer and nearer to natural language parsing, so what makes sense to a visitor reading the page will also make sense to the SE. even down to bolding (<b> or <strong>) and emphasis (<i> or <em>)
