If I buy a previously registered copy of Win 2000 server, will I have any problem installing it on my server?

So long as the original owner has removed it then no. However you may be required to call an 800 number to activate it over the phone rather than the Internet.
Make sure you have the original media as well as the Certificate of Authenticiy. If you are missing either one ask for your money back, it isn't a legal transaction.
