I've looked through the help files regarding bullet problems but can't find the following.

Have just upgraded machine with HP LaserJet 2100 attached from NT to 2000 without re-installing Office 2000. Now Word shows basic bullet (round black blob) on screen correctly but prints it as Greek letter Xi. Windows 98 machine on same LAN can print bullets fine. Word claims to be using the Symbol font and shows the 'font contents' happily. Other bullets apart from unfilled circle also have (different) incorrect characters.

Any suggestions other than a re-install of Office [sad]?

Go to Format in the menu tool bar, select Bullets and numbering. Click on one of the boxes. Click on Customize. Click on Font or Bullet, select one that appeals to you, there are hundreds of variations. Click on OK, that should now be your de-fault bullet.
