exe, vbs, those types of files. I know outlook blocks most of them but I would like my server to strip them. I'm pretty sure you need a third party tool though.
As far as I know, you need a third-party tool to block file extensions. I know that you can block domains, users, etc. from within Ex2k. We use GroupShield from Network Associates to handle attachments.
IF you have Norton Corporate for exchange, there is a registry entry you can do to strip these from your mail as the come in, no third party software needed.
I have found ScanMail 6 by Trend Micro to work very well. It it will do just what you are looking for. They have a free 30 day trial period. After trying it out we bought it. Works great.
gsz,
I think the answer to "is there any way to strip executable attachments out with Exchange without using 3rd-party tools" is no, you can't. I've tried, too. But, as folks here have noted, most Exchange-based anti-virus products can do it, and additionally several firewalls (Watchguard's Firebox for sure, not positive about others) will do the job as well before the email even gets to Exchange.

I've been using it (worked adequately well in "non-Exchange2000 mode", "upgraded" to Mail Security (the only mode they have out of beta is the "Exchange2000 mode" so that's what I'm using) and am eagerly awaiting the non-Exchange2000 version to come out of beta so I can clamp off the spam again. On the whole, I'd recommend it, but try to get it on a separate box that you can use as an SMTP forwarder.
